油发鱼肚500克(湿),鸡蛋3个,鲜蘑100克,豌豆15克,鲜虾仁100克,鸡脯肉100克,罐头荸荠2只,蛋清2只,盐5克,味精5克,料酒10克,葱末5克,生姜末5克,干淀粉5克,清汤2公斤,熟鸡油25克,辣椒油1克,芝麻10克(焙好)
【制作过程】
1、将鱼肚浸泡在温水中,待柔软后,放入碱水,洗去油腻,再用清温水漂洗洁净,沥干水分,用刀片成斜刀片,待用 2、鸡蛋放入冷水锅中,烧开煮熟后,剥去外壳,每一个鸡蛋平分切成4片,剔去蛋黄,将蛋白切成荷花瓣形,放入粉红色食用染料,染成粉红色,待用 3、鸡脯、50克虾仁用刀排斩成鸡虾茸,罐头荸荠拍碎成泥 4、蛋清抽打起泡,至筷子立直不倒,然后将蛋清糊和干淀粉搅拌均匀,再同鸡虾泥、盐、味精调和,倒入瓷盆内(盆内应先涂匀油),用小刀修成圆堆形,然后,将蛋白插入糊内,六瓣一层,内外两层(内外需交叉插入),即杨荷花形 5、再将鲜蘑菇洗净,切去根,摆在荷花四周,虾仁围在鲜蘑菇旁,豌豆镶在两只鲜蘑菇中间,即可上笼蒸熟,取出,待用 6、炒锅旺火烧热,放入熟鸡油,烧热,放入葱姜末煸炒,即放入清汤,鱼肚、豌豆、芝麻、料酒、味精,烧开后,撇去浮沫,倒入汤锅中,再将蒸熟的荷花推入汤内,撒辣椒油,即可
