相传河曲的酸粥的由来纯属一种偶然，李自成起义大军进京路过此地，当地老百姓皆大欢喜，家家户户泡米为大军士卒准备饭菜，谁知由于情况有变，大军临时改变路线，绕道而过，可老百姓泡的米太多，一时半活儿吃不完，放的时间长了就发了酸，老百姓也舍不得扔掉，就用发了酸的米煮成粥吃，谁知意外地发现这用发酸了的米煮的粥并没有影响其食用价值，后来人们便故意将米泡酸做粥食用，慢慢地发现这种酸粥能开胃健脾，护肤美容，妙不可言。难怪这一带的妇女即使不用化装品皮肤也白嫩细腻。
