以菱镁矿煅烧制的得轻烧镁为原料,经消化、碳酸化制得碳酸氢镁溶液,采用活性炭为吸附剂脱除钙、铁等杂质,再热解、煅烧制得高纯氧化镁。

主料： 毛水鸭（蚬鸭）2只约2000克，酸萝卜或酸黄瓜250克，芫荽50克。
配料： 姜2片，葱2条，湿生粉50克，胡椒粉50克，绍酒25克，酱油25克，潮州甜酱或梅膏酱2碟。
做法： 1、水鸭宰好洗净晾干，用碟盛起。姜、葱、酱油、绍酒开匀，把鸭肉内外擦透，腌5分钟，入笼蒸15分钟取出候凉。
2、把鸭起成边肉，鸭骨斩件上湿生粉，鸭肉在上部也涂抹着湿生粉。
3、起油锅，先炸骨后炸肉，骨酥捞起，落碟垫底，鸭肉皮炸脆捞起，切件盖面，淋胡椒油，碟边伴芫荽酸萝卜。跟甜酱或梅膏酱2碟上席。
特点： 甘酥脆，肥而不腻。蘸梅膏酱吃，别具风味。
