为牛科动物山羊或绵羊的乳汁，动物形态详"羊肉"条。
【化学成分】
每100克约含水分87克，蛋白质3.8克，脂肪4.1克，碳水化物5克，灰分0.9克，钙140毫克，磷106毫克，铁0.1毫克，硫胺素0.05毫克，核黄素0.13毫克，尼克酸0.3毫克，抗坏血酸1毫克，维生素A80国际单位。 与牛乳比较，山羊乳较富于脂肪及蛋白质，而绵羊乳更高。山羊、绵羊乳脂肪的脂肪酸，饱和者皆以棕梢酸为最多，但山羊比绵羊含肉豆蔻酸、癸酸较多；不饱和脂肪酸皆以油酸为主，也稍含十二碳烯酸、十四碳烯酸、十六碳烯酸等。
【性味】
甘，温。 ①《别录》："温。" ②《药性论》："味甘，无毒。"
【功用主治】
温润补虚。治虚劳羸弱，消渴，反胃，哕逆，口疮，漆疮。 ①《别录》："补寒冷虚乏。" ②《药性论》："润心肺，治消渴。" ③《孟诜》："治卒心痛，可温服之。" ④《食疗本草》："补肺、肾气，和小肠，亦主消渴，治虚劳，益精气。" ⑤《日华子本草》："利大肠，(治)小儿惊痫疾。" ⑥《纲目》："治大人干呕及反胃，小儿哕啘及舌肿，并时时温服之。"
【用法与用量】
内服：煮沸。外用：涂敷。

①补肾虚，亦主中风：羊乳合脂作羹食。(《食疗本草》) ②治病人干呕：羊乳汁饮一杯。(《千金方》) ③治小儿哕：羊乳一升，煎，减半，分五服。(《备急方》) ④治小儿口疮：羊乳细细沥口中。(《小品方》) ⑤治漆疮：羊乳汁涂之。(《千金方》)
