已有几百年历史。其制作方法是：将白面粉倒入面盆或木板上，慢慢加水，拌匀，再用双手反复揉至粘性成团。已而切成１厘米宽，上盖湿毛巾防干燥。约过１５至２０分钟，双手将其两端提起，边拉边抖，即可任意延长。有些人拉至近一米长时，再合并重新拉细至棉纱一般，抛入滚汤中，稍煮即熟，捞起加入调味辅料，便可食用。
