材料:肥肠、鲩鱼、郫县豆、姜、葱、蒜、干辣椒、香油、莴笋、蒜苗、香芹。

做法:肥肠用特殊方法洗净后切小段;鲩鱼片成鱼片,用盐、黄酒、姜丝腌制,头尾另装盘腌制;莴笋等为底料爆炒;在锅内加入配料煸炒,出味后加入头尾、鱼片及肥肠,同放入秘制酱锅中煮熟。

特色:多见于肥肠与水煮鱼“单打独斗”,现将两者共冶一炉,鱼片鲜嫩之余吸收了肥肠的油润,肥肠和味有嚼头。

师傅教路:不同于重庆做水煮鱼用的油泡方法,更健康,且红油不必回收,更卫生。
