原料:

生净鳝鱼肉250克,姜丝、葱丝、绍酒、精盐、酱油、白糖、味精、胡椒粉、湿淀粉、芝麻油、猪油。

做法:

将鳝鱼肉皮朝上斜切成丝,盛入碗,加绍酒、精盐、湿淀粉拌匀上浆待用。

将酱油、白糖、味精、绍酒、湿淀粉盛入碗,调成芡汁。

炒锅置中火上,下油至五成热时,倒入鳝丝,用筷子划散至成熟,倒入漏勺。

锅内留油少许,放入葱、姜丝略煸,将调好的芡汁加水搅匀勾芡,下鳝丝淋上芝麻油炒匀,出锅装盘,撒上胡椒粉即可。
