大名五百居香肠

产地:中国河北大名。

工艺:系以新鲜猪大腿肉、肋肉、臀部肉、腰肉为主料,大多为瘦肉;肠衣为漂洗洁净无暇的猪肠衣;辅料有石落子、砂仁、香精、精盐、砂糖、纯高梁酒及陈年酱油等。先将肉料洗净去血,切成肉丁,加以各种佐料及调料,搅拌均匀,放置3小时左右,待料味入肉后再灌肠。每灌14厘米左右用麻绳结扎,边灌边扎,直至整条肠衣灌满,然后经恒温烘干而制成。

特点:成品色泽纯正,肠条饱满,粗细均匀,肥瘦适宜,香味醇厚,甜咸兼具,软滑利口,食之不腻,且耐久存。
