松花皮蛋是绵竹县特产,制作方法较为简单。
原料配方:鲜蛋100只,碱面130克,石灰(过筛)500克,草木灰500克,水1公斤
制作方法:
1.选蛋。选用新鲜的鸡鸭蛋。通过看、叶、嗅、服、浮等方法去鉴别它。一定要把好质量关。
2.配料。先将石灰、草木灰混合,加入碱水,拌匀后再加水拌成料泥。
3.滚料泥。将选好的鲜蛋一个个放入料泥中,使蛋均匀粘上料泥。
4.滚灰。将粘好料泥的蛋穿上一层谷糖壳或锯末皆可。
5.装运。将处置好的蛋逐个装入坛中,用泥将坛口密封,放入室内,第一天室内温度保持在30℃,以后可逐渐降温到25℃。若天气过热,装坛3天后可将坛口打开散热,再密封。
6.晒蛋。7天后坛内的蛋取出在阳光下晾晒,否则会造成碱伤害或溶火蛋。
