强化营养婴儿粉 我国6个月以内婴儿缺奶率，城市为58.4％，农村为36.8％，营养性贫血症患病率为40～80％，部分地区高达90％以上。婴幼儿营养不足以及由于营养不良引起的疾病已引起人们的关注。 福建省粮油科技研究所采取营养互补和强化手段，增加有效成分，研制成功“强化营养婴儿粉”，以提高婴儿食品的蛋白质水平、平衡营养素，改善婴儿营养健康状况，满足缺奶婴儿的主食需要。 强化婴儿粉为婴儿提供了因乳中缺乏的v-b2，保证产品的钙、磷等矿物质含量，并达到合理的比例。同时，婴儿粉中还添加了麦芽、谷芽、怀山药等有效成分。麦、谷芽含有淀粉分解酶、软化糖酶、维生素b、卵磷脂；怀山药含有粘蛋白、淀粉酶、精氨酸等，具有健脾胃、清肺、和胃、舒肝及补肾作用，有利于婴儿消化吸收，避免了市售代乳食品容易引起消化不良的副作用。 原料配方 粳米30份 面粉25份 植物蛋白17.5份，蛋黄粉0.5份 奶粉5份 精炼植物油6份蔗糖15份 精盐0.2份 脱胶骨粉0.8份 合计100份 制作方法 1.原料处理：(1)粳米浸泡时，要在常温下浸泡1小时。(2)黄豆软化是在常温下软化1小时；灭活需在压力320千克/厘米2条件下进行。(3)猪骨高压处理需在1.5千克/厘米2压力下处理45分钟。 2.粉碎：原料粉碎细度，要求通过100目筛，骨粉需要通过140目筛。 3.蒸粉：压力0.7千克/厘米2，时间30分钟。 4.提取：麦芽、谷芽水溶提取。 5.浓缩：真空度640～670毫米汞柱，蒸发温度38～40℃。 6.熟料粉碎：专用粉碎设备，并经火焰灭菌。 7.灭菌：紫外线灭菌，压力220伏，灭菌30分钟。 8.包装：采用无菌操作。 质量标准 1.理化指标：(1)营养成分：强化营养婴儿粉的蛋白质、碳水化合物、脂肪以及维生素的含量均达到标准值，大部分指标超过国内同类产品水平。 (2)维生素含量：vb1 0.33毫克/100克、vb2 0.53毫克/100克、尼克酸5.81毫克/100克。 (3)氨基酸含量：含有丰富的氨基酸、婴儿所需的9种氨基酸均达到需要量。 2.卫生指标：符合国家卫生标准。
