啰喏

啰喏(rojak)是一种蔬果沙拉,常见于马来西亚、新加坡和印度尼西亚(印尼称为“rujak”)。“rojak”是马来文“混合物”之意,口语上亦常用作指折衷的混合,尤其用于马来西亚和新加坡社会的多元文化特征。

在马来西亚,印度啰喏(mamak rojak或indian rojak) 包含炸面团、煮马铃薯、炸明虾,煮鸡蛋、芽菜和小黄瓜(青瓜),加上厚厚一层香辣花生酱混合而成。传统上印度穆斯林(mamak)啰喏小贩以改装过的侧边车(sidecar)作为摊档销售啰喏。现在这类流动小贩多改用小货车。新加坡的印度啰喏是包括马铃薯、鸡蛋、豆腐和炸南瓜的杂锦糊,吃时加上甜辣椒酱。

典型的水果啰喏材料有小黄瓜、菠萝、芜菁(大头菜)或沙葛、芽菜、豆卜和油条。较少用生芒果和青苹果。以水、马拉盏(虾酱)、糖、辣椒和青柠汁混合成酱汁。有些会在酱汁里加入南瓜泥、酸豆或黑豆茸。把材料切粒放于碗中,与酱料搅拌,再于上面洒上碎花生或切碎的姜花茎。槟城啰喏则是马来西亚槟城的地道食品,与水果啰喏颇为相似,但加上莲雾、炸鱿鱼和蜂蜜。
