原料配方 大豆10千克 5倍浓缩桔汁2.8千克 5倍浓缩柠檬汁175克 砂糖4.9千克 稳定剂280克

制作方法

1.10千克大豆原料里加30千克水,在室温内浸泡16小时,用80千克热水磨制提取70千克豆浆,以400千克/厘米2高压均质器处理。加热采用板式加热器,其条件为138℃,5秒钟(即第一次加热,此时抗胰蛋白酶失活率为80%)。

2.添加稳定剂、5倍浓缩柠檬汁和砂糖,蛋白质浓度调至1.5%,并以200千克/厘米2压力做均质处理。

3.接着用板式加热器以138℃、4秒种第二次加热,制得桔味豆乳饮料。

产品特点 蛋白质分散性很好,保存3个月无沉淀,从而提高了豆乳饮料的商品价值。
