黑麻酥又名芝麻夹心糕，历史较久，除作糕点食用外，还可以作汤团(圆子)馅料使用，因此，与浙东名产宁波汤团同享盛誉。
原料配方：黑芝麻屑25公斤潮糖37.5公斤熟面粉7.5公斤瓜子仁1公斤黄桂花0.5公斤
制作方法：黑芝麻淘净用旺火炒熟，在石臼中舂打成屑。用砂糖加冷开水3.25公斤混合制成潮糖。先取潮糖30公斤与芝麻屑再舂打成甜屑(或用拌粉机拌透)，过筛，再拌入瓜子仁与黄桂花。
取潮糖7.5公斤与熟面粉擦匀成甜粉，用20眼铁丝筛过筛。
准备长方形薄木板一块，衬上一层纸，在纸的周围装上活动木框(约3厘米高)。先在底上铺上一层甜粉，按平面铺上甜麻屑(约2.6厘米厚)，按平，然后在表面再铺上甜粉，仍按平，即可切成方块进行包装。
