以河南省储备库储藏小麦为样品,从入库小麦质量、储藏年限、储藏仓型及方式、储藏类型等方面研究造成陈化小麦影响因素,得出:入库小麦质量,尤其是芽麦和不完善粒超标是造成陈化小麦主要影响因素,储藏年限、储藏仓型和方式及分布区域对于导致小麦陈化也起着重要作用,储备小麦轮换不应以储藏时间为依据,而应以储备小麦质量为依据。
