补充资料：保健绿豆粉皮
采用纯绿豆淀粉加工制成的绿豆粉皮，呈蛋青色，晶莹透明，有弹性而不粘连，经常食用可以降低血压、清火解暑、健胃生津，具有很好的保健作用。
（1）浸泡 用25kg绿豆在50℃的温水条件下浸泡5h，冬季可用90℃～100℃的热水浸泡，使其膨胀。浸泡时可用小木勺或竹片等器具搅拌，使杂物漂浮水面，用勺撇除。
（2）冲洗 将浸泡好的绿豆用清水冲洗2遍，冲去泥沙等杂质。
（3）磨浆 将冲洗好的绿豆添入石磨，进行磨浆。在磨浆过程中可边添绿豆边加少量水，以磨成浆糊为宜，一遍即可。磨牙不刃的可磨2遍。
（4）滤粉 将磨出的浆糊放入细箩中过滤2次，将箩上的粉渣除去，箩下的粉汁放入水盆中浸泡1天～2天，使淀粉沉淀，撇除水分，这样25kg绿豆可出湿粉块12.5kg。
（5）旋制 旋制时将粉块用凉水调匀成糊状，再依次用小木勺（约半碗）倒入旋锅中，把旋锅再放在滚开的水锅中旋转约30s，加入少许热水，把旋锅埋入冷水中，将凝固成形的粉皮从旋锅中剥下取出。
（6）晾晒 把刚旋出的湿粉皮贴在竹帘上晾晒，晾干即可。
（7）贮藏 将干粉皮存放在通风干燥处，能保持4个月以上不变质。
一般25kg绿豆可旋200张粉皮，每张干粉皮的质量约40g。
