采用纯绿豆淀粉加工制成的绿豆粉皮,呈蛋青色,晶莹透明,有弹性而不粘连,经常食用可以降低血压、清火解暑、健胃生津,具有很好的保健作用。
(1)浸泡 用25kg绿豆在50℃的温水条件下浸泡5h,冬季可用90℃~100℃的热水浸泡,使其膨胀。浸泡时可用小木勺或竹片等器具搅拌,使杂物漂浮水面,用勺撇除。
(2)冲洗 将浸泡好的绿豆用清水冲洗2遍,冲去泥沙等杂质。
(3)磨浆 将冲洗好的绿豆添入石磨,进行磨浆。在磨浆过程中可边添绿豆边加少量水,以磨成浆糊为宜,一遍即可。磨牙不刃的可磨2遍。
(4)滤粉 将磨出的浆糊放入细箩中过滤2次,将箩上的粉渣除去,箩下的粉汁放入水盆中浸泡1天~2天,使淀粉沉淀,撇除水分,这样25kg绿豆可出湿粉块12.5kg。
(5)旋制 旋制时将粉块用凉水调匀成糊状,再依次用小木勺(约半碗)倒入旋锅中,把旋锅再放在滚开的水锅中旋转约30s,加入少许热水,把旋锅埋入冷水中,将凝固成形的粉皮从旋锅中剥下取出。
(6)晾晒 把刚旋出的湿粉皮贴在竹帘上晾晒,晾干即可。
(7)贮藏 将干粉皮存放在通风干燥处,能保持4个月以上不变质。
一般25kg绿豆可旋200张粉皮,每张干粉皮的质量约40g。
