豆豉剁辣椒
豆豉剁辣椒,系浏阳县历史传统产品,采用本地小红辣椒与优质豆豉为主要原料,制作而成,在湖南省内素负盛名。 原料配方:红剁辣椒94公斤豆豉5公斤味精300克麻油500克棕檬酸300克糖精10克 制作方法:将15度盐水倒入豆豉内,搅拌均匀,待盐水全部被豆豉吸收后放置备用。再按比例将辅助料全部放入剁辣内搅拌均匀,装坛,密封即成。 注意事项:用后应及时盖好,及防霉变,存放久了,由于豆豉液的渗透,色泽有所变化,但对质量与滋味没有影响。
