阐述盐和卤水的生产和性质的专著。D.W.考夫曼主编。1960年由纽约莱恩霍尔特出版公司(Rein-hold Pu-blishing Corp.，New York) 初版。1978年由美国化学协会（American Chemistry Society）再版。1982年第三次印刷。全书27章，由考夫曼和其他一些学者分别撰写。内容大体为5个部分:一是盐的矿物学、岩相学和矿床地质；二是盐的各种生产方法，包括：日晒盐，岩盐旱采和粉碎，钻井、汲卤与输卤，卤水净化，真空蒸发制盐、造粒池制盐，产品品种等；三是各种盐和卤水的化验分析和盐的规格;四是盐的化学反应,盐在固态、液态、气态下及其水溶液的物理性质；五是盐的用途，包括在生理、营养、医药方面的作用，在动植物营养方面的作用，以及工业上的广泛用途；还涉及盐的储运和盐业经济。该书是制盐和用盐单位的重要参考资料。
