【原料】

鲜蘑350克,油菜心500克,植物油500克(实耗75克),香油10克,精盐7克,味精2克,白糖5克,料酒5克,水淀粉15克,鸡汤300克。

【制作过程】

.将油菜心洗净,菜心头部劈十字刀口,深度为菜心的五分之一。2.炒锅加入植物油,烧至七成热时投入菜心(分两次炸),用勺不停翻动,至菜心软熟,捞出控净油。原锅置火上;依次加入鸡汤200克,将炸好的菜心、精盐4克,味精1克,白糖5克,翻炒片刻,将菜心取出,
