基本特点

基本材料 江米500克、酒曲(酒药)150克。

做法:1.将江米放入净水中浸泡1小时,洗净捞出。

2.锅内放入清水,把江米下入,用旺火烧煮,煮至江米五成熟捞出。用冷水淘两次,倒入笊篱中,将水控净,再上笼屉蒸一下,倒在盆里。

3.把酒曲擀成面,放入江米内搅匀,上面拍平,中间用小擀面杖捣一个5分大小的洞,使空气流通。夏季用布、冬季用棉被盖好,保持30度左右的温度,使其发酵即成。
