性质：臭味的最低嗅知浓度。由经过特殊训练的人员，在特别配制的空气中，依靠嗅觉来判断。测定时，一般必须有不少于5人同时进行判断，并用平均浓度(10-6)表示。嗅觉阈值有感觉阈值(也叫做绝对阈值)和识别阈值两种。感觉阈值是虽然不知是什么性质的气味，但可以感觉到有气味的最小浓度。识别阈值是可以感觉到是什么气味的最小浓度。一般后者总是高于前者。如氨的感觉阈值为0.1，识别阈值为0.6；硫化氢分别为0.0005和0.006；甲硫醇分别为0.0001和0.0007。嗅觉阈值是研究和评价气味常用的最重要的参数。
