【原料】
用料:去皮秋茄200克,蟹肉60克。调料:葱榄、姜末、蒜茸各3茶匙,绍酒、湿淀粉各0.5汤匙,精盐、麻油各2茶匙,胡椒粉、味精各1茶匙,上汤1汤匙,植物油500克。
【制作过程】
1.将秋茄切开两边后,每边切为两条,再将每条切为棱形段。 2.炒锅内放油,待油烧至六成热,将茄段放入炸至好,倾在漏勺里,沥油,再将茄段用水滚去油腻。
3.炒锅内放油0.5汤匙烧四成热,把茄段放在锅中,加入绍酒,注入上汤用精盐、味精调味,加入葱榄、姜末、蒜茸蟹肉
