主料
鸡肉300克，榄仁100克，青豆150克，红萝卜小半个，蒜茸半茶匙，酒2茶匙。
辅料
盐1/4茶匙，蛋白1汤匙，生粉3/4茶匙，姜汁、酒各1茶匙，油1汤匙，生抽1茶匙，盐、糖3/4茶匙，生粉半茶匙，麻油、胡椒粉各少许，清水2汤匙。
制法
1. 榄仁飞水滴干，用温油炸至微黄色盛起。
2. 青豆洗净，飞水冲冻。红萝卜去皮切粒。
3. 鸡肉洗净切粗粒，加入调味料拌匀，腌20分钟，泡嫩油待用。
4. 烧热锅，下油两汤匙爆香蒜茸，加入青豆、红萝卜略炒，鸡肉回锅，加酒，下芡汁料及榄仁兜匀上碟即成。
