材料
2 盒 盒装豆腐
12 个 咸蛋黄
0.5 杯 上汤
2 汤匙 炸乾葱片
调味料
适量 盐
适量 胡椒粉
少许 虾子
烹调方法
1. 小心将豆腐切成方粒状。
2. 咸蛋黄隔水蒸熟约10分钟至熟。将蒸熟的咸蛋黄趁热用子压碎,备用。
3. 烧热镬下油,待油热后下咸蛋黄炒至蛋黄起泡,即下豆腐、上汤、盐及胡椒粉,边煮边小心炒匀豆腐及蛋黄。
4. 继续以中火煮至上汤溶入蛋黄成汁,待收乾水分成糊状上碟,加上炸葱头及虾子即可品尝。
