To remove the bitterness and fishy smell from hydrolysates of pollock offal protein,the optimum operation conditions which used active carbon,yeast and cyclodextrin as adsorbent were researched.

[原料] 银鳕鱼400克,西芹150克,红椒末15克,姜末15克,韭菜末15克,芹菜末15克。

[[[调料]]] 老抽少量,美极鲜2克,盐1克,味精1克,黄酒2克,胡椒粉0.1克,生粉10克,清油15克(实耗)。

[操作程序]

1.银鳕鱼去皮、骨批成长方形厚片,洗净后上浆。西芹撕去茎,切成寸段,用少量盐腌一下。

2.蒸盘中擦点油,西芹放在底部,上好浆的鱼片放西芹上,上笼蒸熟后排入盘中。

3.热锅过油,加入黄酒、汤、老抽、美极鲜、盐、味精及红椒末、姜末、韭菜末、芹菜末,烧开后勾芡,淋上明油,浇在鱼片上即成。

[特色点评] 色泽光亮鲜艳,入口味鲜嫩滑,是一款洋为中用的菜肴。

[要领提示]蒸的时间不能过头。
