千层饼是宁强人出山干活或上街赶场,用作干粮的一种风味独特的食品。这种饼,有小脸盆那么大,厚的有八九寸,薄的也不下四五寸。初次见的人以为不熟,不敢轻易尝食。其实不然,好的千层饼全是头道细面制作,青钢木火反复烙熟的。精华毕萃、质酥味香,和蒸馍、锅盔、面包比,另有风味。
千层饼这么厚并不是一次做好烙熟的,一般是先用开水和好面,在平底锅里烙熟一层,放一层香料,再烙一层,这样熟一层,就把生的一面翻向锅底,熟的、—层翻上来,如此反复,一锅一次只烙一个饼。为讲究花样,人们放的香料,一层与一层不同,或花生、或核桃、或枣干、或芝麻,一层一个味道,层层各有风味,千层饼火花小而均匀,不起泡,水分少而不易霉坏,是人们远路喜欢携带的干粮。
