With konjac as the raw material, acetic anhydride as dispersant and acylating agent, sodium acetic as catalyzer, the preparation technique of water-soluble high molecular weight konjac glucomannan acetate was studied under neutral, anhydrous conditions.

将黑糖水溶液或甘蔗汁液或二者的混合液浓度,调整为6-14°bx;加适量种酵母进行酿制,在酿制当日或酿制数日后添加适量的醋酸菌,使乙醇发酵和醋酸发酵同时进行;约经过90d,如果酸度达6%以上,残留乙醇在1%以内,应将容器口密封,熟化2-3个月;滤掉残渣,过滤上澄液即为本制品。
