[原 料] 茄子３条 豆腐１块 素酱５０公克
[调味料] 盐１匙 糖１匙 豆瓣酱２匙 酒１匙 味素１匙 酱油１匙 香油少许
[要 领] 茄子先过油，颜色才鲜丽且不易炒烂
[做 法]
1.茄子洗净、切块，豆腐切块备用
2.茄子放入油锅炸过
3.热锅入油，放入茄子、素酱调味料略炒
4.再放下豆腐、素高汤半碗，烧煮至汤汁块收干，勾芡，淋入香油即可
