性质: 又称瓜尔豆胶。白色或淡黄褐色自由流动的粉末。溶于冷水和热水,不溶于油、油脂、烃、酮和酯。水溶液无味、无臭、无毒、呈中性。由于溶液中含有少量的纤维和纤维素,呈淡灰色半透明状。在水中还呈现高黏性。其黏度变化取决于颗粒的大小、pH值和温度。与其他植物胶、淀粉和水溶性蛋白质等具有相容性。由瓜尔豆籽经磨碎、筛分、吹风除皮和胚芽、胚乳处理等工序加工制成。用作增稠剂、絮凝剂、浮选剂、成膜剂和上浆剂等。
