    醛糖或酮糖(见单糖)的羰基经还原得到的多元醇。糖醇在自然界特别是在植物界广泛存在。甘油(丙三醇)是最简单的糖醇,是油脂的主要组成成分;D-葡萄糖醇广泛存在于许多水果中;D-甘露糖醇在许多植物浆汁(如柿霜)和海洋生物中以游离形式或结合形式存在。从海带制取碘的工业中,有大量D-甘露糖醇副产品。
    糖醇为无色结晶固体,一般具有甜味,在水中的溶解度较相应的糖为低。D-葡萄糖还原得D-葡萄糖醇。有些糖醇由于分子对称性,成为内消旋体,有些醛糖经还原得到同一糖醇  ,如D-葡萄糖和L-古罗糖经还原均得到D-葡萄糖醇。酮糖如D-果糖还原时得到D-葡萄糖醇和D-甘露糖醇的混合糖醇,后者也可以从D-甘露糖还原而得。在实验室中,由醛糖还原为糖醇最常用的还原试剂是硼氢化钠,也可用钠汞齐或兰尼镍催化还原。工业上采用催化还原或在碱性介质中电解还原的方法。通常得到的糖醇是混合糖醇。
