性质:由唇形科植物紫苏(Perilla  frutescens Britton var. acuta kudo)及其他品种的茎、叶经水蒸气蒸馏得到。为黄色至红棕色液体,具草香、辛香,带紫苏醛香味。 0.9264,1.4998,旋光度+93.6°(20℃),总醛量40%~55%。主成分为紫苏醛(perilla aldehyde)、苯甲醛、3-辛醇、1-辛烯-3-醇、芳樟醇、α-蒎烯、l-芋烯、对异丙基甲苯、石竹烯等。主产于中国和日本。主要用于食品香料,也用于口腔卫生用品,还用于分离紫苏醛以合成烟草甜味剂紫苏亭(perrillartine)。
