木耳又称黑木耳、云耳,在林区分布很广。在森林内自然条件下,靠菌孢子自然散落到林木枝干或枯倒木上生长,子实体皱褶如耳状,黑褐色,湿润时半透明,干燥后呈革质。根据耳背有无茸毛,分为光木耳和毛木耳。光木耳朵大、柔软,质量较优;毛木耳肉厚质硬,品质较差。

野生木耳依采集时期的不同分为春耳、伏耳和秋耳。小暑前采收的为春耳,朵大肉厚,质量好,应采大留小,雨后则采差留好。自小暑到立秋采收的为伏耳,因气温高、雨水多、害虫多,容易造成流耳、烂耳,应大小一起采收。立秋后为秋耳,朵小肉薄。

采摘最好是在雨后天晴,或在晴天早晨有露水,耳子处于湿润状态时进行。采收回来的湿耳,要及时晒干或烘干。天晴时可将湿耳薄薄地摊在晒席上,晒1~2天。阴雨天可在室内搭架,生火烘烤,但温度不宜太高,保持在30℃左右,促使耳子干燥。
