凉豌豆粉,是云南盛夏小吃,昆明的中老年人提起凉豌豆粉都会勾起青少年时代最温馨的回忆,至今仍是家庭自配口味的夏季凉食。其成品酸、甜、麻、辣,鲜香味浓,尤受青少年之独爱。在农村,每逢赶集,豌豆粉摊常摆在小溪岸边,一来取水方便,二采又添凉爽,情食交融,充满诗情画意。农民们当疲乏之时,买上一碗凉豌豆粉,吃到仅剩汤汁时,掏出随身所带冷饭、拌匀而食,又是一番风味。 原料: 主料:上等菜于豌豆:千克。 调料:香菜,姜、蒜、醋、甜酱油、咸酱油,芝麻油、花椒油、昧精、盐、胡椒面、红辣子油各自入器。(因食时调料按各人爱好现配,各有轻重,故不便列举重量)。 制法: (1)制粉:将干豌豆淘洗干净,晒干,磨成豆瓣,除去皮,再磨成粉,过箩筛筛出细面入盆兑入清水(2千毫升)搅成浆,加盐。锅上火,注入水,待水温至40摄氏度左右时,徐徐淋入豌豆浆,边淋边用铁铲铲动锅底,将锅巴(也受热凝固的片)翻出、防止糊底,直到稠浓。当锅已与糊浆各占一半时、盛入瓦盆冷却凝固后、翻扣在木板上,盖上湿纱布。 (2)兑调料:香菜洗净切细入碗。姜、蒜去皮剁成泥分别装碗兑上凉开水成为姜汁,蒜汁,其他调料分别各装1碗。 (3)装碗:将豌豆粉切成薄条入碗(传统做法是切一片放在左手掌内,右手拿餐刀把左手掌内的豌豆粉打成薄条,一面打一面入碗)。根据就餐者口味要求,用小木勺将各种调料舀入碗内,拌匀即可食用。
