主料：猪脑花4副，混合油100克，郫县豆瓣25克
辅料：姜10克，蒜10克，莴笋尖100克，蒜苗100克，干红辣椒5克
调料/腌料：料酒10克，精盐1克，花椒粉1克，豆豉5克，味精2克，水豆粉2克，醋2克，辣椒粉3克
制作过程
1、猪脑用清水浸漂，撕去血筋，然后放入加醋的沸水中氽一下，捞入清水中漂透、沥干。豆瓣、豆豉剁细，姜、蒜切成末，莴笋尖、蒜苗切成9厘米长的段。
2、炒锅置旺火上，倒入混合油烧至七成热，下干红辣椒炸呈棕红色捞出，铡成刀口辣椒。锅里下豆瓣炒至发红发亮，下辣椒粉、蒜、姜米、豆豉炒出香味后掺入鲜汤，略熬一下，放入莴笋尖、蒜苗、煮断生放入精盐、味精，捞出放入窝盘内。
3、把猪脑花放入煮过菜的滋汁中，放料酒，用小火煮至入味，勾二流芡推转即起锅，盛于装有莴笋的窝盘中，撒上铡碎的刀口辣椒，浇上烧沸的混合油，最后撒上花椒粉即成。
