性质:matter  食品、饲料中一种蛋白质含量的度量。由于一般蛋白质中含氮量约为16%,故在概略分析中,常用凯氏(Kjeldahl)法测出总氮量,再乘以系数6.25来求得。实际上,它是食品、饲料中含氮化合物的总称,既包括真蛋白又包括非蛋白含氮化合物,后者又可能包括游离氨基酸、嘌呤、吡啶、尿素、硝酸盐和氨等。此外,不同蛋白质的氨基酸组成不同,其氮含量不同,总氮量换算成蛋白质的系数也不同,如小麦和多数谷物的换算系数为5.80,水稻5.95,大豆5.7,多数食用豆和坚果5.3,牛奶6.38等。粗蛋白只是一个粗略的概念。
