茄子是典型的家庭菜肴.茄子吃法形形色色,但总的感觉无论怎么制作，总是离不开以大蒜为伴。
用料：茄子250克，猪肉馅100克，大蒜100克。
做法：
①茄子洗净去皮，切成合页片，大蒜剁成茸状。
②猪肉加入葱、姜末、料酒、盐、味精调好味，夹在茄子中。
③用两个鸡蛋与面粉调成软糊。
④把夹好肉馅的茄合沾上鸡蛋软糊，下油锅炸熟。
⑤炒锅上火，放入蒜茸炒干，同时加入牛肉松、干贝丝、芝麻、盐、味精炒成沙状。
⑥把炸好的茄合同“风沙”拌匀，装盘上桌同食。
茄香蒜浓，回味无穷。
