性质:又称酶活性。酶催化一定化学反应的能力。是研究酶的特性、生产和应用酶制剂时,必不可少的一项指标。酶活力的大小,可以用酶在一定条件下催化反应速度,即单位时间内底物的减少量或产物的增加量来表示,通常取用后者。催化反应速度愈快,酶的活力愈高。酶活性单位为卡塔尔(katal),其SI单位为mol/s。表示催化底物按1mol/s的速率所转化的酶量。一般酶活性的测定大都是测定单位时间内产物量的增加。
