魔芋 giant arum 天南星科魔芋属多年生草本。古称蒟蒻。以地下球茎供食用。原产东半球热带雨林和亚热带季风林地区。中国西南、华南、台湾等地栽培较多。魔芋球茎扁球形,含有毒生物碱,不能生食。经煮后,则无毒。叶片深绿色,二歧分裂。从球茎的节上发出肉质不定根 ,上具纤维状侧根及根毛,为吸收器官。花为肉穗花序,能结浆果及“种子”(见图)。2年生以上植株可能开花,但一般一棵植株当年若开花,则不长叶;长叶,则不开花,即所谓“花、叶不见面”。中国所产花魔芋、东川魔芋、疏毛魔芋和疣柄魔芋可食用。魔芋喜温暖湿润,在年平均温度14~20℃、无霜期240天以上的地区均能种植。适宜肥沃湿润、富含腐殖质的土壤。耐荫,多种在房前屋后、疏林下、林缘或溪旁沟口的平缓坡地。产区大面积栽培时多与玉米间作。以母球茎或子球茎繁殖。魔芋含葡甘聚糖,有降低血清胆固醇的作用,其淀粉膨胀力达80~100倍,可加工成魔芋豆腐。此外,还可用作微生物的培养基,浆纱、造纸用的粘合剂,以及瓷器的涂料等。鲜球茎中所含有毒生物碱,医药上外用,有解毒消肿功能。
