性质: 白色结晶,有甜味。熔点96.5~97.5℃。旋光度+178°。能溶于水和热醇,不溶于乙醚。不能被斐林溶液还原。一般含两个分子结晶水,在130℃下失去结晶水。白海藻、酵母中提取而得的一种双糖,化学上由两个葡萄糖分子组成。此糖有稳定细胞膜和蛋白质的作用。用于生物制品的干燥和保存
