胛心绞肉 1斤
虾仁 1/2斤
葱 2支
姜片 数片
蚝油 2大匙
米酒 2大匙
白胡椒粉 1/2小匙
蛋白 1个
大白菜 1颗
酱油 4大匙
太白粉 2大匙
高汤(或清水加蚝油3大匙、柴鱼味精1大匙、盐1小匙) 3~4杯
油葱酥 3大匙
香菜 少许
制作:
(1)绞肉剁碎约3~5分钟,加入拍碎的虾仁继续剁3~5分钟直到绵细均匀并出筋。
(2)放入碗中,以调味料调味拌匀之後,以手往盆内摔打肉泥使其滑嫩。若调味料是蚝油,可再加3大匙水打水;若用酱油的话,则不必打水,但需加少许糖调味。
(3)将拌好的绞肉做成肉球,大小随意,表面沾裹酱油与太白粉,以180℃入锅油炸至金黄色後捞出。
(4)白菜另外用盐及黑胡椒粒略炒後,铺在砂锅锅底,把肉丸放入,加高汤及调味料煮开後转小火继续焖1小时,中途加入2~3大匙油葱酥,最後起锅前撒些香菜、胡椒粉及香油还有少许酒,即可上桌。
