补充资料:香甜山药饼
用料:山药600克,瓜子仁20克,枣泥300克,熟面粉60克,蜂蜜60克,白糖160克,油1000克(实耗100克),猪油40克。
制法用法:(1)山药洗净蒸熟去皮,压成泥,拌上熟面粉揉匀,搓成长条,切成小块,擀成一个个圆片,每张圆片上放1份枣泥瓜子仁馅,包成小包子,再擀成饼,待用。(2)锅置火上,倒入油,待油至7成热时,逐个下入山药饼,炸成柿黄色,倒入漏勺中。(3)锅内留少许油,重置火上,下入蜂蜜、白糖和清水60克,糖化后下入山药饼,汗收浓后下猪油,翻身出锅即成。
