    壳聚糖是甲壳素的脱乙酰化产物,又称可溶甲壳素、壳多糖、甲壳胺,是一种天然生物高分子聚合物,白色结品性扮末。有很强的吸湿性,仅次于甘油,高于聚乙二醇、山梨醇。在吸湿过程中,分子中的羟基、胺基等极性基团与水分子作用而水合,分子链逐渐膨胀,随着pH值的变化,分子够从球状胶束变成线状。具有很好成膜性、透气性和生物相容性。无毒,且可生物降解。
    用作水溶性胶粘剂的增稠剂。
