性质:现今绝大多数发酵过程为纯种培养过程,即在培养过程中只允许一种微生物生长,若有其他种微生物窜入培养液中生长则叫污染,也叫染菌。发酵过程被杂菌污染后,由于杂菌生长会与生产菌种争夺营养和溶氧,杂菌所分泌的代谢物不但会影响目标产物的纯度还可能降低或升高pH值,还可能对生产菌种起抑制作用,大大干扰生产菌的生长,甚至使生产菌死亡,对发酵造成极大的危害。
