壳聚糖是甲壳素的脱乙酰化产物，又称可溶甲壳素、壳多糖、甲壳胺，是一种天然生物高分子聚合物，白色结品性扮末。有很强的吸湿性，仅次于甘油，高于聚乙二醇、山梨醇。在吸湿过程中，分子中的羟基、胺基等极性基团与水分子作用而水合，分子链逐渐膨胀，随着pH值的变化，分子够从球状胶束变成线状。具有很好成膜性、透气性和生物相容性。无毒，且可生物降解。
用作水溶性胶粘剂的增稠剂。
