补充资料:溜璃枣

琉璃枣是我县民间传统名菜,1958年,我县名厨师刘德如之父刘学增参加省里群英会,在烹饪比赛中,做的就是琉璃枣,因做工熟练,色美味香,独具一格,而获得大奖。民间遇有红白事,一般都要上这道菜。

琉璃枣的做法是:

取本地产干圆枣40枚,白糖150克,鸡蛋1个,干淀粉50克,精粉50克,香油10克,花生油500克(耗50克)。

将水发干枣捞出用布擦干,将鸡蛋、干淀粉,精粉放于碗中,搅匀成糊。枣挂糊放入热油锅内炸至呈金黄色,外皮酥时捞出。

勺内加入香油、白糖,用中火炒至糖呈金黄色,倒入炸过的枣,颠翻挂匀糖汁,倒在案上晾凉即成。

此菜风味特点:金黄光亮,酥脆香甜。
