西卤蹄筋
主料
水发蹄筋6两（约240克），鸡肉2两（约80克），冬笋、白菌、红萝卜、青豆各1两（约40克），青葱1条，上汤2杯，生粉1茶匙，清水、生油、麻油各适量绍酒1/2茶匙。
配料
调味料：盐1茶匙，糖1/2茶匙，胡椒粉少许。
做法
1、蹄筋切段；冬笋、白菌、红萝卜弄净切片，与青豆一齐飞水；青葱切度。
2、鸡肉切片，用少许调味料拌腌后泡嫩油。
3、烧热锅，落油一汤匙，爆香冬笋、白菌、红萝卜、蹄筋，鸡肉回锅，加绍酒，落上汤、青豆、葱度，慢火炆约十分钟，生粉加两汤匙清水埋芡，再加少许麻油即成。
备注
心得：若用油发大干蹄筋，可这样进行：先把干蹄筋放入暖油中浸软，并用慢火炸至胀大，洒少许水再油爆；如此重复三次后，把蹄筋放清水中浸软切段即成。
