补充资料：奶粉制酸奶
原料配方 全脂奶粉45～50千克 糖40～45千克 水500毫升 市售酸奶3～4汤勺
制作方法 1.全脂奶粉与糖混合，用水调成甜奶汁，加热煮沸后，取下奶锅，盖上盖，冷却。
2.在冷却过程中搅拌1～2次，以防止结奶皮。
3.当冷却至40℃左右(以不烫手为宜)时，加入市售酸奶作为菌种(也称“引子”)，和奶汁搅匀，倒入干净的杯子里，用干净纸或杯盖盖严进行培养发酵。
4.发酵时间的长短依不同季节而变化。一般夏天于室温下培养5～7小时；冬天可将杯子泡入40℃左右的温水中保温，培养6～10小时，待奶汁凝固并产生酸香味时，放冰箱或冷水中冷却即成酸奶。
下次再制时，可用上述酸奶做菌种，依此连续使用2～3次后，需要换新菌种。若用含糖的速溶全脂奶粉，其用量需增加55～60克，加糖量可减至35～40克。
