分子式C6H14N4O2,分子量174.20。学名2-氨基-5-胍基戊酸。天然精氨酸是L-型,从水中结晶的产物含两分子结晶水,105℃失去结晶水。在乙醇中结晶的是无水物。238℃分解。溶于水,微溶于乙醇,不溶于乙醚。是精子蛋白的重要成分。由于胍基的存在精氨酸呈碱性,易与酸反应形成盐,属于碱性氨基酸。在营养学中是一种必需的氨基酸。明胶及鱼精蛋白中含量较多。可用作食品的添加剂并用以制取药物;精氨酸注射液可用于肝昏迷的急救药。可由明胶水解并精制而成。
