| 汽锅 用质地细腻、含铁量高的特殊陶土制成的无釉细陶（俗称紫砂）锅。由于锅身状似扁鼓,底部中心有一中空的汽鼻向上突起,靠水蒸汽蒸制菜肴而得名。汽锅适于制作禽类和鱼类菜肴 ,并可作为菜肴的盛具。通常与深砂锅配套使用。使用时，先把处理好的原料、调味品放入汽锅中,盖上锅盖,再把汽锅放在装有清水(约8成满)的深砂锅口上,汽锅与深砂锅的接合部缝隙多要用湿纸加以密封 ,然后把深砂锅上火加热。水烧沸后,蒸汽通过汽鼻进入汽锅,把原料蒸熟。蒸好的菜连锅上桌。由于成菜后的汤汁是蒸制过程中产生的蒸馏水,所以,用汽锅蒸制的菜肴具有汤汁清澈,滋味醇厚的特点。
