This passage studyed sodium alginate of different viscosity and different quality influenced on noodle texture,through measureing and evaluating quality of all the cooking samples,and through test TPA passed all quality analysis to study the factor that sodium alginate effected the noodle consumption of hardness,elasticity,tensile contraction,dissolution rate of starch and other indi-dicators.

Three texture analysis methods were studied to test texture of wheat flour extrusion food which included one slice,two slices with vertical grains together and two slices with parallel grains together.
