性质:又名麸氨酸。白色晶体。熔点247~249℃(分解)。旋光度[α]D20-30.5°。溶于水,微溶于醇,不溶于醚。其钠盐有特殊鲜味。有微生物发酵法制得的一种酸性氨基酸。主要用作食品鲜味料,也用作生化试剂和发酵用原料。为氨基酸类药。口服本品可防止肝昏迷。并可用于癫痫小发作,能减少发作次数。还可用于胃酸不足和胃酸过少症。制剂为片剂。
